does anyone eat "family style" like here? One from column A, one from column B...

It depends really. Some places do and some don't. I would say eating family style is more common in China than in the US but 100% of restaurants don't serve family style. I have not seen the one from column A one from column B thing in China though.

We need a place like that with similar prices in NJ. Who are the Hui? Obviously Muslim but what is their story?

The Hui are a group of ethnically Chinese Muslims and are one of China's "minority peoples." From what I heard, some Arab traders came to China on the Silk Road, met and married a Chinese women, and just stayed. Over time they built a group of Chinese speaking Muslims with some of their own traditions, like the Islam thing, but were still largely Chinese.

Sounds delicious to have those noodles. Maybe we can also have a place like that in Great Neck. And Muslims don't eat pork--semi kosher.
